Flammkuchen – The fastest, thinnest, and crispiest “pizza” by Yvonne.
Today I’m making my favorite dish from Germany — Flammkuchen. It’s very similar to pizza, but thinner, crispier, and incredibly quick to prepare.
Recipe for Two Flammkuchen (or thin-crust pizzas)
For the dough:
- 250g all-purpose flour
- 125g water
- 1 tsp salt
- 2 tbsp olive oil
For the topping:
- 2 medium onions
- 100g salami or bacon
- 300g cream cheese
- 1 tsp salt
- 1 tsp pepper
Instructions
Preheat your oven to its highest setting with both top and bottom heat — usually between 250°C and 275°C depending on your oven.
Peel and slice the onions into thin rings. Place them in a bowl with 150ml water and microwave for 1 minute to soften. Dice the salami into small cubes. In another bowl, mix the cream cheese with salt and pepper until smooth.
To make the dough, combine all the ingredients in a bowl. Once the mixture is uniform, knead it for about 5 minutes until it becomes elastic and smooth.
Roll out the dough on your countertop using a rolling pin. Shape it into a thin round or oval and transfer it to a baking tray lined with parchment paper. Stretch it gently with your hands to cover the tray evenly.
Spread the cream cheese mixture evenly over the dough. Top with the softened onions and diced salami.
Bake on the lowest rack of your oven for about 7 to 10 minutes. Once the top is golden and crisp, transfer the flammkuchen directly to the oven floor for an additional 45 seconds to crisp up the bottom.
